It would be nice if you would share some of your recipes Smile
Did you use the Designasausage Natural Stabiliser - this give a much better consistency!

Chilli chocolate sausages

These are great - one of our favourites in fact. Get the chilli flakes from http://www.designasausage.com/pages/prods.asp?catid=2&subcatid=6 as they give a lovely texture without going watery! Use about 15gm per kg meat and 20g of dark chocolate. Razz
