Bursting sausages

The main reason for sausages bursting out of the casings is that they have been overfilled. When filling the casings the best way is to squeeze them slightly as the casing is being filled, to flatten just a little. When cooking make sure that this is done on a low temperature so that the sausage cooks through without burning.

hi am new to sausage making as i have about 4 months experience.
lately, all the sausages ai make expands out of the casing rather the sausage casing shrinks.
the meat texture is good and the meat does not disintergrate. it retains its original length when frying any help is appreciated
