Gluten and dairy free

You can use the Gluten Free breadcrumbs instead of the Rusk and omit the stabiliser, The sausages may be a little crumbly but if you use a good gluten free spicemix they will taste good. Check the link below

Stabiliser Gluten and Dairy free

HI I am trying to make some saussages suitable for my sons and have been reading about saussage stabiliser.
We canot use any gluten, dairy or yeast.
What alternatives are there for stabilising the saussage?
I am planning to use rice flour for the 'rusk'.
any sugestions would be great.
I have a few kg of sholder pork so will try it out with that grinding finely first time round..
