When to link
I prefer not to tie the end as this can cause air bubbles. The best way is to leave about 4 cm of casing unfilled at the end - just squeeze it together. I then make one long sausage, Remove it from the machine and then link by pinching and twisting the casing in alternate directions. Have fun sausage making

When to link?
Hi,
I've just bought my first sausage making kit, and before I start trying to make sausages, I thought I should ask a few (possibly daft) questions. When should I link the sausages? As I go along, or at the end? I'm using a manual machine.
I presume that I should tie the open end of the case before I start?
I'm sure I'll think of other things as I go along!
cheers,
john
